Haupia (Coconut Pudding) - cooking recipe

Ingredients
    3 c. frozen coconut milk, thawed OR 2 c. fresh coconut milk mixed with 1 c. water
    1/2 c. sugar
    1/2 c. cornstarch
    1/2 tsp. vanilla
    pinch of salt
Preparation
    In a saucepan, combine coconut milk and sugar.
    Gradually mix in cornstarch.
    Add vanilla and salt.
    Stir and cook on medium heat until thickened.
    Pour into dish and chill for at least 1 hour.
    Cut into 36 squares.
