Stuffed Potatoes - cooking recipe
Ingredients

2 large baking potatoes
1/4 c. plain nonfat yogurt
2 Tbsp. grated Parmesan cheese
1 Tbsp. skim milk
1/2 tsp. salt
1/4 tsp. paprika
vegetable cooking spray
2 Tbsp. minced chives
1/8 tsp. garlic powder
dash of pepper
Preparation

Wash potatoes and spray with cooking spray.
Bake at 375\u00b0 for 1 hour or until done.
Let cool to touch.
Cut potatoes in half lengthwise.
Scoop out pulp, leaving a 1/4-inch shell.
Set shells aside.
Combine potato pulp, yogurt and next 6 ingredients in a medium bowl; mash until light and fluffy.
Pipe or spoon mixture into shells.
Place potatoes on an ungreased baking sheet. Sprinkle with paprika and bake, uncovered, for 10 minutes or until thoroughly heated.
Yield: 4 servings.
