Cheese Stuffed Mushroom Caps - cooking recipe
Ingredients

1 lb. fresh large mushrooms
4 scallions
salt and pepper
1/2 c. butter
1/2 lb. grated Cheddar cheese
paprika
Preparation

Wash mushrooms.
Carefully remove stems from caps.
Chop stems.
Trim root end of scallions and then chop scallions, including green tops.
Melt 2 tablespoons of butter in frying pan. Saute chopped stems and scallions.
Mix with grated cheese in bowl.
Salt and pepper to taste.
Melt remaining butter.
Brush inside and outside of each mushroom cap with butter.
Place in shallow baking pan.
Mound cheese mixture into each cap.
Sprinkle with paprika.
Bake at 375\u00b0 until mushrooms are cooked and cheese is bubbly.
Serve hot.
