Pickle Beets - cooking recipe

Ingredients
    2 gal. fresh beets, washed and stem cut to about 1-inch from top
    4 c. vinegar
    6 c. sugar
    1/4 c. allspice
Preparation
    Cover fresh beets in boiler in water.
    Cook until tender.
    Pour off hot water; run cold water over beets.
    When cool enough, peel beets and slice large beets; if small, leave whole.
