Jambalaya - cooking recipe
Ingredients

1/4 c. oil
1 chicken, cut up
1 lb. sausage
shrimp (optional)
2 large chopped onions
1 1/2 c. chopped celery
1 1/2 c. chopped green pepper
1 Tbsp. chopped garlic
4 c. long grain rice
5 c. stock
2 tsp. salt
cayenne pepper to taste
2 c. chopped green onions
Preparation

Season and brown chicken in oil over medium heat.
Add sausage; saute with chicken.
Remove both from the pot.
Add flour to make a roux or roux-like product like Kitchen Bouquet (1 to 2 tablespoons).
Saute onions, celery, bell pepper and garlic in oil until soft.
Return meat to pot.
Add liquid ingredients, salt, pepper and other spices; bring to a boil.
Add rice; return to a boil.
Reduce heat and simmer for 10 minutes.
Turn rice quickly from top to bottom; cover and remove from heat.
Let stand for 20 minutes.
Add green onions.
