"Red Eye" Ripe Tomato Relish - cooking recipe

Ingredients
    1 peck ripe tomatoes
    4 c. onions, chopped fine
    4 c. celery, chopped fine
    1 c. salt (plain)
    1/2 tsp. red pepper
    1/2 c. white mustard seed
    3 c. white sugar
    4 tsp. cinnamon
    2 tsp. cloves
    3 c. vinegar
    1/2 c. horseradish (optional)
Preparation
    Peel tomatoes without scalding.
    Mix first 4 ingredients and let stand overnight.
    In the morning, drain well.
    Add remaining ingredients and mix on and off all day. Put in clean pint canning jars.
    May be refrigerated.
