Canadian Cheese Soup - cooking recipe

Ingredients
    1/4 c. butter or margarine
    1/2 c. onions, finely chopped
    1/2 c. carrots, finely chopped
    1/2 c. celery, finely chopped
    1/4 c. flour
    1 1/2 Tbsp. cornstarch
    1 qt. chicken stock
    1 qt. milk
    1/8 tsp. soda
    1 c. diced Velveeta (I use a little more)
Preparation
    Melt butter in pot you will use to make soup in.
    Saute vegetables until soft.
    Add flour and cornstarch and cook until bubbly.
    Add stock and milk and make a smooth sauce.
    Add soda and cheese.
    Season with salt and pepper.
    Top with parsley before serving if desired.
    Use a large pot; will foam after soda is added.
