Sweet Potato Muffins - cooking recipe
Ingredients

1/2 c. margarine, softened
1 1/4 c. sugar
2 eggs
1 1/4 c. cooked sweet potatoes, mashed
1/3 c. milk
1 1/2 c. flour
2 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
Preparation

Cream margarine, add sugar.
Beat at medium speed on mixer. Add eggs, beat well.
Stir in sweet potatoes.
Combine flour, baking powder, salt and cinnamon.
Add to creamed mixture.
Spoon in greased muffin caps, filling 2/3 full.
Combine 2 Tbsp. sugar and 1 tsp. cinnamon.
Sprinkle over batter.
Bake at 400 degrees for 20 - 25 minutes.
