Garden Chicken Marengo - cooking recipe

Ingredients
    1 whole chicken breast, skinned, boned and sliced into cutlets
    2 c. sliced mushrooms
    2 Tbsp. olive oil
    1/2 c. sliced scallions
    4 Tbsp. fresh parsley, minced
    2 cloves garlic, minced
    3 bay leaves
    2 tsp. fresh thyme leaves
    2 c. tomato juice
    2 large ripe tomatoes, peeled, seeded and cubed
Preparation
    Cut chicken into 1-inch cubes.
    Combine chicken and mushrooms in a shallow layer in a nonstick skillet; add olive oil.
    Cook over high heat until mushrooms and chicken begin to brown on both sides.
    Add remaining ingredients, except tomatoes.
    Cover and simmer 5 minutes.
    Uncover and simmer 3 to 4 more minutes until sauce is thick.
    Stir in tomatoes at last minute, only until heated through.
    Remove bay leaves before serving.
    Serves 4.
