Fluffy Potato Casserole - cooking recipe

Ingredients
    2 c. hot or cold instant mashed potatoes
    1 (8 oz.) pkg. cream cheese (room temperature)
    1 small onion, finely chopped
    2 eggs
    2 Tbsp. flour
    salt and pepper to taste
    1 (3 1/2 oz.) can French fried onions
Preparation
    Can be prepared for baking up to 4 hours ahead.
    Put the potatoes in a large mixing bowl.
    Add all the ingredients, with the exception of the French fried onions.
    Beat at medium speed until well blended, then at high speed until light and fluffy. Add salt and pepper, if needed.
    Spoon into a greased 8 x 8-inch square baking dish.
    Cover with the French fried onions and bake, uncovered, at 300\u00b0 for 35 minutes.
