Catfish Stew - cooking recipe

Ingredients
    5 lb. catfish
    5 lb. potatoes, diced
    3 lb. onions, diced
    3 slices salt-fat meat (fatback)
    1 (10 3/4 oz.) can cream of mushroom soup
    1 (10 3/4 oz.) can cream of tomato soup
    salt and pepper to taste
Preparation
    Cover catfish in water; cook until meat will separate from bone.
    Remove catfish from stock (reserve stock).
    Use a 3 gallon pot.
    Saute onions in oil.
    Add potatoes and cover with fish stock.
