Linda'S Squash Casserole - cooking recipe
Ingredients

8 yellow squash, sliced
1/2 medium onion, chopped
1 stick margarine
1 c. grated Cheddar cheese (I use the mild)
1 c. grated Velveeta Cheese (I use processed American)
1 can cream of mushroom soup, or cream of chicken soup
1 sleeve of Ritz crackers, crushed
1 stick margarine, melted
Preparation

Boil the squash and onion in small amount of water until tender. Drain well; add 1 stick of margarine, the cheeses, and the soup; mix well. Pour into greased casserole. Mix together the crackers with melted margarine; pour on top of the squash mixture. Bake 25 to 30 minutes at 350 degrees.
