Sauteed Zucchini - cooking recipe
Ingredients

3 strips bacon
3 small zucchini
1/2 c. diced onion
1 clove minced garlic
2 diced tomatoes
Preparation

Cook bacon over medium heat until crispy; drain on paper towels.
Pour off all but 1 tablespoon fat.
Slice zucchini; add to hot fat.
Add onion and garlic.
Cook, stirring often, until soft, but not mushy.
Add tomatoes.
Cook for 2 minutes.
Serve with bacon crumbled over top.
Serves 4.
