Parmesan Crab Cakes - cooking recipe

Ingredients
    1 (8 oz.) pkg. Crab Delights flakes, rinsed and chopped
    1 c. (4 oz.) 100% grated Parmesan cheese
    2 eggs, beaten
    1/2 c. finely chopped red or green pepper
    1/2 c. finely chopped green onion
    1 tsp. Dijon mustard
    1/2 c. dry bread crumbs
    1/4 c. oil
    tartar sauce
    sourdough bread slices, toasted
Preparation
    Mix together first six ingredients until well blended.
    Shape mixture into eight 3-inch patties.
    Coat with bread crumbs.
    Heat oil in large skillet over medium-high heat.
    Cook patties 3 minutes on each side or until golden brown.
    For each sandwich, spread two bread slices with tartar sauce.
    Makes 4 sandwiches.
