Banana Blueberry Mini Loaves - cooking recipe

Ingredients
    1 c. sugar
    1/2 c. oil
    1 c. (2 medium) mashed ripe bananas
    1/2 c. plain yogurt
    1 tsp. vanilla
    2 eggs
    2 c. all-purpose or unbleached flour
    1 tsp. baking soda
    1/2 tsp. salt
    1 c. fresh or frozen blueberries (unthawed)
Preparation
    Heat oven to 350\u00b0. Grease and flour bottoms only of three 6 x 3 1/2-inch loaf pans.* In large bowl, beat together sugar and oil. Add bananas, yogurt, vanilla and eggs; blend well. Lightly spoon flour into measuring cup; level off. Add flour, baking soda and salt; stir just until dry ingredients are moistened. Gently stir in blueberries. Pour into greased and floured pans. Bake at 350\u00b0 for 40 to 50 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pans. Cool completely. Wrap tightly and store in refrigerator. Makes 3 (12-slice) loaves.
