Zucchini Bread - cooking recipe

Ingredients
    1 c. Crisco oil
    2 c. sugar
    3 eggs
    3 c. grated zucchini
    3 c. flour
    1/2 c. pecans (optional)
    2 tsp. cinnamon
    3 tsp. vanilla
    1 tsp. baking soda
    1 tsp. salt
    1/2 tsp. baking powder
Preparation
    Sift together flour, cinnamon, soda, baking powder and salt. Blend oil and sugar.
    Add eggs, one at a time, beating well after each addition. Add sifted ingredients.
    Beat, then add zucchini, vanilla and nuts, if desired.
    Blend.
    Pour into 2 greased and floured loaf pans. Bake at 325\u00b0 for about 1 hour.
