Carrot-Raisin Bread - cooking recipe

Ingredients
    2 2/3 c. water
    2 2/3 c. brown sugar
    2 c. shredded raw carrots
    2 c. raisins (golden)
    1 tsp. cinnamon
    1/2 c. butter
    2 large eggs
    4 c. flour
    1 Tbsp. baking soda
    1/2 tsp. salt
    1 c. chopped nuts
Preparation
    Combine water, sugar, carrots, raisins, cinnamon and butter in a large saucepan.
    Bring to a boil, reduce heat and simmer for 20 minutes.
    Cool the mixture.
    When cooled, beat in the eggs.
    Sift the flour, soda and salt.
    Add to mixture and fold in chopped nuts.
    Turn into 2 buttered 8-inch loaf pans.
    Bake at 350\u00b0 for 45 to 50 minutes or until done.
