Creamy Peanut Soup - cooking recipe
Ingredients

1/4 c. butter or margarine
1 medium onion, chopped fine
2 ribs celery, chopped fine
3 Tbsp. all-purpose flour
8 c. chicken broth (can use canned)
2 c. creamy peanut butter
2 c. light cream or half and half
1/3 c. unsalted chopped peanuts

Preparation

Melt butter in pan.
When bubbly, stir in onion and celery. Cook until clear, not brown.
Add flour and stir until well mixed. Pour in chicken broth and blend well, stirring constantly.
Bring to a boil, then turn down heat.
Add peanut butter, stirring, until blended.
Put soup through sieve.
Add cream slowly to the strained soup and stir until blended.
Garnish with chopped peanuts and a dash of paprika for color.
Makes 10 to 12 servings.
