Microwave Rice Pudding - cooking recipe

Ingredients
    3/4 c. sugar
    2 Tbsp. cornstarch
    1/4 tsp. salt
    2 1/2 c. milk
    2 egg yolks
    2 Tbsp. butter
    1 tsp. vanilla extract
    2 c. cooked rice
Preparation
    In 1-quart casserole, blend together sugar, cornstarch and salt.
    Gradually stir in milk, mixing well.
    Microwave on High 5 to 7 minutes. Stir every 3 minutes until mixture is smooth, thickened and clear.
    Stir small amount of hot pudding into egg yolks. Return egg mixture to hot pudding, mixing well.
    Microwave 1 to 3 minutes. Add butter and vanilla. Stir. Add rice to pudding. Stir and serve.
    (Raisins may be added.)
