Warm Corn Salad - cooking recipe

Ingredients
    3 Tbsp. oil
    1 onion, chopped
    1 (24 oz.) bag frozen corn (about 4 1/2 c.)
    1/2 tsp. ground cumin
    grated zest of 1 lime
    juice of 2 limes
    1/4 tsp. salt
    1 (4 oz.) jar sliced pimentos, drained well
Preparation
    In a medium pot, heat oil over medium-high heat.
    Add onion; cook stirring occasionally until very tender, about 10 minutes. Stir in corn, cumin, lime zest and juice, salt and pimentos. Cover and cook until heated through, about 10 minutes.
    Makes 8 servings.
