Skillet Beans And Squash - cooking recipe

Ingredients
    1 1/2 c. yellow squash, in 1/4-inch slices
    1 1/2 c. zucchini, in 1/4-inch slices
    1 c. cubed, pared hubbard or acorn squash
    1/2 c. chopped onion
    1 c. chicken broth
    1 to 2 Tbsp. chopped jalapeno
    1 large garlic clove, finely chopped
    2 cans kidney beans, drained (16 oz.)
    1/4 c. freshly chopped cilantro
Preparation
    Heat all ingredients except cilantro to boiling in 10-inch skillet sprayed with Pam cooking spray.
    Reduce heat, cover and simmer until vegetables are tender (approximately 7 minutes). Stir in cilantro.
    Serves 4.
    Contains 100 calories, 1 gram fat and 0 milligrams cholesterol.
