Hyeholde'S Cheesecake - cooking recipe

Ingredients
    3 lb. cream cheese
    11 oz. sugar
    10 oz. half and half
    5 large eggs
    1 tsp. vanilla
    1/4 tsp. salt
    1/4 c. butter
    1 c. graham cracker crumbs
    1 c. sugar
    1 1/4 lb. cream cheese
    3 Tbsp. flour
    1/2 tsp. salt
    1 pt. dairy sour cream
    1 tsp. vanilla
    6 egg yolks
    6 egg whites
    3 Tbsp. sugar
    1 tsp. cream of tartar
Preparation
    Add cream of tartar to egg whites and beat until foamy. Gradually add sugar and beat until stiff.
    Fold egg white mixture into base thoroughly and pour mixture into prepared pan.
    Sprinkle with remaining crumbs and bake at 325\u00b0 for 1 hour and 45 minutes or until firm.
    Turn off oven; open door and leave in oven for 10 minutes.
    Remove from oven and let cool on rack away from draft.
