Mashed Potatoes - cooking recipe
Ingredients

9 large potatoes
2 (3 oz.) cream cheese
1 c. sour cream
1 tsp. salt
1/4 tsp. pepper
2 Tbsp. butter
grated cheese (optional)
Preparation

Peel potatoes and put into saucepan.
Cover potatoes with water and 1 teaspoon salt.
Cook until tender.
Drain and then mash.
Add cream cheese, sour cream, pepper and butter.
Beat until light and fluffy.
If too thick, add a little milk.
Cool. Cover and place in refrigerator.
Potatoes may be used any time within two weeks.
They do not get stiff like other leftover mashed potatoes.
Recipe freezes well.
To use, place desired amount in greased casserole dish; dot with butter (grated cheese) to cover the top.
Bake at 350\u00b0 until heated through (about 30 minutes).
If frozen, bake longer.
Makes 8 cups or 12 servings.
