Oven-Fried Eggplant - cooking recipe

Ingredients
    1 peeled eggplant
    1 egg
    1 c. dry bread crumbs
    1/8 tsp. pepper and cayenne
    1 1/2 tsp. Parmesan
    1/4 tsp. garlic powder
    1/4 tsp. dried basil
    1 Tbsp. Crisco
Preparation
    Heat oven to 375\u00b0.
    Slice eggplant in 1/2-inch slices.
    Beat egg.
    In bowl (flat bottom), combine crumbs and seasonings.
    Dip slices in egg, then in crumb mixture.
    Place on preheated cookie sheet that has been greased with 1 tablespoon Crisco.
    Continue coating slices and adding to hot cookie sheet.
    Bake 15 minutes, turn over and bake 15 more minutes.
