Veal Scallopini - cooking recipe

Ingredients
    1/4 c. flour
    1 tsp. salt
    1/8 tsp. pepper
    1 1/2 lb. veal cutlets
    2 Tbsp. butter or margarine
    1 c. sliced canned or fresh mushrooms
    1/4 c. dry sherry
    1/4 c. water
    2 Tbsp. chopped chives
    1 Tbsp. lemon juice
    1/4 tsp. rosemary
Preparation
    Combine flour, salt and pepper.
    Pound veal with mallet until 1/4-inch thick.
    Coat veal with seasoned flour.
    In large frying pan, melt butter and cook veal on both sides until golden brown. Add remaining ingredients.
    Simmer, covered, 20 minutes.
    Remove to platter and spoon sauce over veal.
