Kim Chee(Pickled Cabbage) - cooking recipe

Ingredients
    2 lb. cabbage head or Chinese cabbage, cut in 1-inch pieces
    2 red chili peppers, minced, or 2 Tbsp. dried chili powder
    1 clove garlic, minced
    1 stalk green onion, chopped
    1 Tbsp. sugar
    1/2 tsp. paprika
    1 small carrot, shredded (optional)
Preparation
    Soak cabbage overnight in 1 quart of water with 1/4 cup of salt.
    Next morning drain all but 1/2 cup of water.
    Add rest of ingredients and mix well.
    Press tightly into quart jars and cover.
    Let stand at room temperature for 4 days.
    Refrigerate. Serve cold.
