Cheese Tarts - cooking recipe

Ingredients
    2 (8 oz.) pkg. cream cheese (room temperature)
    2 eggs
    3/4 c. sugar
    1 Tbsp. lemon juice
    1 tsp. vanilla
Preparation
    Place in bowl and beat at high speed until smooth.
    Line muffin tins or use aluminum foil cups on cookie sheet.
    Place 1 vanilla wafer in each cup.
    Fill each cup about 3/4 with cheese mixture. Let cool.
    Top with your favorite Musselman's pie fillings (cherry, blueberry, apple).
    Bake in 375\u00b0 oven for 20 minutes.
