Ingredients

2 (8 oz.) cans crushed pineapple
3/4 c. butter, softened
1/2 c. brown sugar, packed
1/2 c. granulated sugar
1 egg
1 tsp. vanilla
1 c. shredded carrots
1 c. chopped walnuts
1 c. raisins
1 1/2 c. flour
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. baking powder
1/4 tsp. salt
Preparation

Drain pineapple (well).
Cream butter and sugars.
Beat in egg and vanilla.
Beat in pineapple, carrots, nuts and raisins. Combine remaining ingredients.
Beat into pineapple mixture until well blended.
Drop by heaping tablespoon onto greased cookie sheet.
Flatten tops with spoon.
Bake in 375\u00b0 oven for 15 to 20 minutes.
Makes 3 dozen cookies.
