Marg'S Zucchini Bread - cooking recipe

Ingredients
    3 eggs, beaten
    1 c. vegetable oil
    2 1/4 c. sugar
    2 c. grated zucchini, unpeeled
    3 tsp. vanilla
    3 c. sifted flour
    1 tsp. salt
    1 tsp. soda
    3 tsp. cinnamon
    1/4 tsp. baking powder
    1 c. chopped pecans
Preparation
    Preheat oven to 325\u00b0 and grease two loaf pans (8-inch).
    Mix eggs, oil, sugar, vanilla and zucchini until well blended.
    Fold in dry ingredients including nuts.
    Turn batter into baking pans. Bake approximately 1 hour.
