Cheddar Cheese And Asparagus Soup - cooking recipe

Ingredients
    3 Tbsp. butter
    1/2 lb. asparagus, trimmed and cut into 1/2-inch pieces
    1 clove garlic, crushed (optional)
    3 Tbsp. flour
    4 c. milk
    3 c. shredded sharp Cheddar cheese
    1/2 tsp. salt
    1/8 tsp. white pepper
Preparation
    Melt butter in heavy, medium size saucepan over medium heat. Add asparagus and garlic; saute, stirring occasionally, about 5 minutes.
    Gradually blend in flour; cook, stirring constantly, 3 to 5 minutes.
    Reduce heat to medium-low.
    Gradually stir in 1 cup milk and the cheese; cook, stirring constantly until cheese is melted.
    Stir in remaining milk, salt and pepper.
    Stir just until hot.
    Remove garlic before serving.
