Shrimp Lori - cooking recipe

Ingredients
    1/2 c. cream of coconut
    1/2 c. water
    1 Tbsp. cornstarch
    1 c. chopped red pepper
    1/2 c. chopped green pepper
    1/2 c. chopped onion
    2 seeded and finely chopped jalapeno peppers
    1 clove garlic, finely chopped
    3 Tbsp. vegetable oil
    2 lb. medium raw shrimp
    2 c. chopped tomatoes
    cooked rice
    parsley
Preparation
    Combine the first 3 ingredients until smooth.
    Place remaining ingredients in a large frypan or wok.
    Toss together for 5 to 8 minutes; add soup mix.
    Cook for 3 to 5 minutes, until heated through.
    Serve over rice; garnish with chopped parsley, if desired.
