Raspberry Vinaigrette Salad - cooking recipe

Ingredients
    1 head bibb lettuce, torn into bite size pieces
    3 c. spinach, torn into bite size pieces
    2 oranges, separated
    3 kiwi fruits, sliced
    2 red apples, diced
    1/2 c. vegetable oil
    1/4 c. raspberry vinegar
    1/2 tsp. grated orange rind
    1 Tbsp. honey
    1/4 tsp. salt
    1/8 tsp. pepper
Preparation
    Blend oil, vinegar, orange rind, honey, salt and pepper together in screw-top jar; shake vigorously.
    Chill.
    Combine lettuce, spinach, oranges, kiwi and apples in a large salad bowl, reserving a few kiwi slices for garnish.
    Just prior to serving, pour dressing over salad; toss.
    Garnish with reserved kiwi. Serves 8.
