Potato Pancakes - cooking recipe

Ingredients
    3 medium raw potatoes, washed, pared and grated
    2 eggs, separated
    1 1/2 Tbsp. flour
    1/2 tsp. baking powder
    1 tsp. salt
Preparation
    Beat egg yolks.
    Stir in mixture of flour, baking powder, grated potatoes and salt.
    Mix well.
    Beat egg whites until rounded peaks are formed.
    Fold into potato mixture.
    Spoon about 2 tablespoons batter for each pancake into hot fat in a skillet. Brown on both sides.
    Serve with applesauce.
    (Makes about 1 dozen pancakes.)
