Carrot Cake With Pineapple - cooking recipe

Ingredients
    3 c. flour
    2 c. sugar
    2 tsp. baking soda
    2 tsp. cinnamon
    2 tsp. vanilla
    1 tsp. salt
    2 Tbsp. orange rind or 1/2 c. coconut
    2 large (junior) jars carrot baby food
    1 1/2 c. chopped nuts
    1 small can crushed pineapple (juice and all)
    3 eggs, slightly beaten
Preparation
    Combine all ingredients and mix thoroughly.
    Pour into greased and floured tube or Bundt pan. Bake at 350\u00b0 for 1 hour.
    This cake freezes well.
    Do not frost if you are going to freeze it.
    Thaw and then frost.
