Clara Simon'S Fresh Apple Cake - cooking recipe
Ingredients

2 eggs, well beaten
2 c. sugar
1 c. oil
2 tsp. vanilla
2 Tbsp. lemon juice
1 Tbsp. grated lemon rind
1 tsp. salt
3 c. sifted flour
1 1/4 tsp. baking soda
dash of cinnamon
3 c. peeled, chopped apples
1 to 2 c. chopped nuts
Preparation

In a bowl, beat eggs.
Add sugar, oil, vanilla, lemon juice, lemon rind and salt.
Gradually beat in sifted flour, baking soda and cinnamon (mixture will be very thick).
Stir in the apples and nuts.
Pour into a greased and floured tube pan (10-inch size). Bake at 325\u00b0 for 1 1/2 hours.
Before serving, sprinkle with powdered sugar.
