Carrot Puffs - cooking recipe

Ingredients
    4 or 5 large carrots, scraped and sliced
    1 c. all-purpose flour
    1 tsp. baking powder
    1/4 tsp. salt
    1/8 tsp. white pepper
    Pinch of ground nutmeg
    1 egg, slightly beaten
    1 Tbsp. fresh minced parsley
    Peanut oil
    Powder sugar (optional)
Preparation
    Cook carrots, cover, in a small portion of boiling salted water 15 minutes or until tender; drain.
    Mash carrots, and let cool.
