Veal Scallopini - cooking recipe
Ingredients

4 veal cutlets
1 small clove garlic, quartered
2 Tbsp. oil
1 Tbsp. flour
1/2 tsp. salt
few grains pepper
few grains nutmeg
1 small onion, thinly sliced
1/2 c. Marsala wine (I use any white)
1 (4 oz.) can mushrooms or 1/2 lb. fresh
1/2 tsp. paprika
2 Tbsp. chopped parsley
Preparation

Saute garlic in oil 5 minutes.
Discard garlic.
Brown cutlets in oil.
Mix flour, salt, pepper and nutmeg.
Sprinkle over meat. Add onion and wine.
Cover and simmer 20 minutes, turning meat several times.
Add more liquid (wine or tomato juice) if needed. Add mushrooms; cover and cook 8 to 10 minutes more.
Serve with sauce.
Garnish with paprika and parsley.
Makes 4 servings.
