Tarragon Chicken Salad - cooking recipe

Ingredients
    2 whole chicken breasts
    3 Tbsp. sour cream
    3 Tbsp. mayonnaise
    1/2 tsp. dried tarragon
    1/2 c. finely chopped celery
    1/4 c. chopped pecans
    salt and pepper to taste
Preparation
    Poach the chicken breasts in simmering water to cover until done, 25 to 30 minutes.
    Do not overcook.
    Remove the chicken from the poaching liquid and cool completely.
    Chicken can be cooked in the microwave.
    Remove the skin and bones from the chicken breasts and cut or tear the meat into small pieces and put it in a mixing bowl.
    Mix the sour cream and mayonnaise together and stir into the chicken, a little at a time, just until the mixture is creamy. Gently stir in the tarragon, celery and nuts and season with salt and pepper.
