Lemon Meringue Pie - cooking recipe

1 1/2 c. sugar
1/3 c. flour
1/4 tsp. salt
2 c. boiling water
3 eggs, separated
1 1/2 tsp. grated lemon rind
1/4 c. lemon juice
2 Tbsp. butter
1/4 c. sugar
Preparation

Mix sugar, flour and salt.
Gradually stir in hot water; cook in top of double boiler over boiling water, stirring, until mixture thickens.
Mix egg yolks (slightly beaten), lemon rind and juice.
Add a little of the hot mixture to them, then gradually stir yolk mixture into the hot mixture.
Add butter; cool.
Turn into a baked pie shell.
Beat egg whites until stiff; gradually beat 1/4 cup sugar into them.
Spread meringue over pie; bake in a slow oven at 250\u00b0 until delicately browned.
