Aileen Beever'S Potato Soup - cooking recipe

Ingredients
    1/3 c. finely chopped onion
    1/2 stick butter
    1/3 c. finely chopped celery
    1 medium carrot, shredded
    3 medium potatoes, diced
    2 c. water
    1 Tbsp. pimento
    1 (12 oz.) can Milnot
    salt and pepper
Preparation
    Saute onion in butter.
    Add celery, carrot, potatoes and water.
    Cook until vegetables are tender.
    Add pimiento and Milnot.
    Heat, but do not boil.
    Add salt and pepper.
    Makes 4 servings.
