Corn Pie - cooking recipe

1 1/4 c. fine saltine cracker crumbs
1/2 c. melted butter
1 1/2 c. milk
2 c. frozen corn
1/2 tsp. salt
1/4 Tbsp. instant minced onion
2 Tbsp. flour
2 eggs, beaten

Preparation

Mix crumbs and melted butter.
Set aside 1/2 cup crumbs.
With spoon, press remaining crumbs into 9-inch pie tin to form a shell. In a saucepan, mix 1 cup milk, corn, salt, pepper and onion. Bring to a boil.
Reduce heat and simmer 3 minutes.
Blend flour and 1/4 cup milk.
Stir into hot mixture and cook, stirring, until thickened.
Cool slightly.
Gradually add eggs, stirring vigorously.
Pour into lined pan and sprinkle with reserved crumbs and paprika.
Bake at 400\u00b0 for 15 minutes.
Cut and serve.
