Don'T-Cook-The-Pasta Manicotti - cooking recipe

Ingredients
    1 lb. lean ground beef
    1/2 c. chopped onion
    2 cloves minced garlic
    4 c. tomato juice, divided
    1 (6 oz.) can tomato paste
    1 tsp. sugar
    1 tsp. salt
    2 tsp. oregano
    1/8 tsp. pepper
    3 c. shredded Mozzarella cheese, divided
    2 eggs, slightly beaten
    1/2 c. grated Parmesan or Romano cheese
    8 oz. pkg. manicotti shells
Preparation
    In a large skillet, brown meat with onion and garlic.
    Drain well.
    Stir in 2 cups of tomato juice, tomato paste, sugar and seasonings.
    Simmer while preparing filling.
