Ingredients

1 lb. flank steak
1 egg white
1 Tbsp. cornstarch
2 Tbsp. lemon juice
3 Tbsp. soy sauce
3 Tbsp. dry mustard
1/3 c. white wine vinegar
2 Tbsp. vegetable oil
1 medium red bell pepper, cut into 1/4-inch strips
1 medium green bell pepper, cut into 1/4-inch strips
3 scallions, chopped
2 Tbsp. dry sherry
2 tsp. Asian sesame oil
Preparation

Cut steak across grain on diagonal into thin strips.
In a medium bowl mix together egg white, cornstarch, lemon juice and 2 tablespoons soy sauce.
Add beef slices and toss to coat.
