Zucchini Oatmeal Muffins - cooking recipe

Ingredients
    2 1/2 c. flour
    1 c. nutmeats, chopped
    1 Tbsp. baking powder
    1 tsp. cinnamon
    1 medium zucchini, finely shredded
    1 1/2 c. sugar
    1/2 c. quick oatmeal, uncooked
    1 tsp. salt
    4 eggs
    3/4 c. Crisco oil
Preparation
    Into a large bowl, combine the flour, sugar, nuts, oatmeal, baking powder, salt and cinnamon.
    In a medium bowl, beat eggs slightly with fork. Stir in zucchini and oil.
    Stir in egg mixture all at once into flour mixture just until flour is moistened. (Batter will be lumpy.) Fill muffin tins half full of batter and bake in a preheated 400\u00b0 oven for 25 minutes.
    Makes 25 medium muffins.
    Freezes well.
