Sri Lankan Fried Rice - cooking recipe

Ingredients
    2 c. rice
    1/2 c. shredded cabbage
    1/2 c. scallion, finely chopped
    4 oz. frozen bag peas and carrots
    1/2 tsp. chopped ginger
    1/2 tsp. chopped garlic
    2 eggs
    1/2 stick margarine
Preparation
    Cook rice and allow to cool. Saute vegetables in margarine. Add beaten eggs and scramble and mix it together with ginger and garlic.
    Add rice to vegetable/egg mixture and add salt and soy sauce to taste.
