Peanut Brittle - cooking recipe

Ingredients
    1 1/2 c. shelled raw peanuts
    1 1/4 tsp. salt
    1 c. sugar
    1 1/2 c. syrup
    1/2 c. water
    1 1/2 tsp. butter
    1/2 tsp. lemon extract
Preparation
    Place peanuts in
    a
    baking
    pan.
    Sprinkle
    them
    with salt. Heat salted peanuts
    at
    200\u00b0 for about 3 minutes until salt lightly clings to
    them.
    In
    a
    pot
    combine sugar, corn syrup and water.\tCook over low heat stirring constantly until mixture becomes very brittle.
    Remove from heat.
    Quickly stir in butter and lemon
    extract.
    Add peanuts.
    Pour mixture into a shallow greased pan.
    When\tcool
    enough
    to handle, stretch mixture to desired thickness.\tAllow
    to harden and break into irregular pieces.
    Yields 1 to 1 1/4 pounds.
