Ingredients

6 c. zucchini, peeled and grated
2 c. water
6 c. sugar (I use less as 6 c. is too sweet)
1/2 c. ReaLemon juice
1 c. crushed pineapple
2 small pkg. Jell-O (apricot or peach)
Preparation

Combine water and zucchini.
Boil 6 minutes.
Drain well.
Add sugar, lemon juice and pineapple. Mix and boil 6 more minutes. Remove from heat and add Jell-O.
Stir well and put into jars or freeze.
