Flounder Fillet Florentine - cooking recipe

Ingredients
    2 pkg. frozen leaf spinach
    1 1/2 lb. flounder fillets
    1/2 c. water
    2 Tbsp. lemon juice
    1 tsp. salt
    1/2 tsp. pepper
    1/4 c. skim milk
    1 1/2 Tbsp. flour
    1/4 c. Parmesan cheese
Preparation
    Cook spinach; drain well.
    Fold flounder in small bundles. Arrange in shallow 6-cup baking dish.
    Pour over water and lemon juice; sprinkle with salt and pepper.
    Cover tightly.
    Bake at 350\u00b0 for 15 minutes, or until fish flakes easily.
    Remove from oven; drain cooking liquid into measuring cup (should be 3/4 cup). Heat in saucepan.
    Combine milk and flour; mix well.
    Cook over moderate heat, stirring constantly, until thickened.
    Spread drained spinach around fish; pour sauce over and top with cheese. Bake at 425\u00b0 until sauce bubbles.
