Ingredients

4 c. sugar
5 c. cider vinegar
1 c. water
2 Tbsp. pickling spices
1/2 bushel beets
Preparation

Boil beets until tender; peel.
Slice and set aside (if small leave whole).
Mix all other ingredients and bring to a boil.
Add cooked beets and simmer 15 minutes.
Pack in sterile jars and cover with liquid.
Seal at once.
Yields 8 pints.
