Butterscotch - cooking recipe

Ingredients
    1 lb. sugar
    3 Tbsp. butter
    3 Tbsp. water
Preparation
    Mix sugar and water in a porcelain saucepan.
    Add butter and simmer, without stirring, until a spoonful tested in cold water becomes brittle.
    Turn into well buttered pans and set aside to cool.
    Cut into squares with a buttered knife before the candy hardens.
